  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, melted
  • 2 large eggs, at room temperature
  • 2 tablespoons packed light or dark brown sugar
  • 1 and 3/4 cups buttermilk
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the waffle maker on medium-high heat and set your oven to 200°F (93°C). Place a wire rack on a baking sheet to keep finished waffles warm.
  2. Whisk together the whole wheat flour, baking powder, ground cinnamon, and salt in a large bowl until evenly combined.
  3. In a separate bowl, whisk the melted butter, eggs, and brown sugar until smooth and homogenous.
  4. Add the buttermilk and vanilla extract to the wet mixture and whisk to combine thoroughly.
  5. Pour the wet ingredients into the dry ingredients and whisk gently to combine without overmixing.
  6. Lightly grease the waffle maker and pour about 1/3 cup batter into each well.
  7. Cook each waffle for 4 to 5 minutes until crisp and golden brown.
  8. Transfer cooked waffles to the warm oven rack to keep them crisp while cooking the remaining batter.
  9. Serve immediately with toppings of choice, such as butter, syrup, fresh fruit, or yogurt.

Notes

Let the batter rest for 5 minutes after mixing for a lighter texture. Store cooled waffles in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
