Taco Loaded Baked Potatoes

Baked potatoes stuffed with seasoned ground beef, melted cheese, and fresh toppings, perfect for a family dinner or game day.

  • 454 g lean ground beef
  • 46 medium Russet potatoes
  • 28 g taco seasoning
  • 120 ml water
  • 120 g sharp cheddar cheese, shredded
  • 120 ml sour cream
  • 25 g green onions, chopped
  • 85 g fresh tomatoes, diced

Instructions

  1. Preheat your oven to 200°C. Wash and scrub the potatoes thoroughly to remove any dirt.
  2. Pierce each potato several times with a fork to prevent bursting while baking.
  3. Arrange the potatoes directly on the oven rack and bake for 45 to 50 minutes, or until they are fork-tender and the skin gives slightly to pressure.
  4. While the potatoes are baking, heat a large skillet over medium heat. Add the lean ground beef and cook until it is browned and cooked through, breaking up any clumps as you go. Drain excess grease if necessary.
  5. Stir in the taco seasoning and water. Combine thoroughly and let the mixture simmer for 5 minutes, stirring occasionally, until thickened and flavorful.
  6. Once the potatoes are baked, carefully slice each potato lengthwise. Fluff the insides gently with a fork to create space for the toppings.
  7. Spoon the seasoned beef mixture over the fluffed potatoes.
  8. Top each potato immediately with shredded cheddar cheese, sour cream, chopped green onions, and diced tomatoes. Serve while hot, allowing the cheese to melt for a delightful finish.

Notes

For perfect baked potatoes, choose ones that are similar in size for even cooking. Store leftovers in an airtight container for up to 3 days.
