Sweet Grilled Teriyaki Chicken

  • pounds boneless and skinless chicken thighs
  • 1 cup soy sauce
  • 1 cup packed brown sugar
  • 1 cup pineapple juice
  • 4 cloves chopped garlic
  • 1 tablespoon minced fresh ginger

Instructions

  1. Start by placing the chicken thighs in either a large bowl or a gallon-sized Ziploc bag.
  2. In a medium bowl, create the marinade by mixing the soy sauce, brown sugar, pineapple juice, garlic, and ginger together. Stir until the sugar is completely dissolved.
  3. Pour the marinade over the chicken. If using a bag, squeeze out the air before sealing it. If using a bowl, wrap it tightly with plastic wrap. Let it marinate in the fridge for 4 hours, or overnight for the best flavor.
  4. When ready to cook, remove the chicken from the marinade but keep the marinade. Pour it into a saucepan and let it simmer over medium heat for 5-10 minutes until it reduces slightly and becomes food-safe.
  5. Preheat your grill to medium-high heat. Grill the marinated chicken, brushing it with some of the hot marinade. Cook for about 6-8 minutes on each side until the internal temperature reaches 165°F and you achieve beautiful char marks.
  6. Transfer the grilled chicken to a baking dish and pour the remaining hot teriyaki sauce over the top. Serve while hot for the best experience.

Notes

For additional flavor, consider adding sesame seeds or sliced green onions as a topping before serving. Leftover grilled chicken can be stored in an airtight container in the refrigerator for up to 3 days.
