Simple Garlic Butter Chicken Pasta for Busy Nights

A warm, cozy weeknight dinner featuring tender chicken and silky pasta in a garlic butter sauce, perfect for busy nights.

  • 12 oz pasta, any shape
  • 1 lb chicken breast, trimmed
  • 4 tbsp butter, divided
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 cup Parmesan, grated
  • 1/2 cup pasta water, reserved
  • 1/4 cup parsley, chopped
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp chili flakes

Instructions

  1. Boil the pasta in salted water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Heat 1 tbsp olive oil and 1 tbsp butter in a skillet over medium-high heat. Season the chicken with paprika, salt, and pepper, then cook the chicken breast until golden on both sides and cooked through. Remove and set aside.
  3. Reduce heat to medium, melt the remaining butter in the same skillet, add minced garlic and chili flakes, and sauté until fragrant, about 30 to 60 seconds.
  4. Pour in the reserved pasta water and simmer gently for a minute to loosen any browned bits and marry flavors.
  5. Add the drained pasta and cooked chicken to the skillet, tossing to coat everything evenly in the sauce.
  6. Stir in grated Parmesan and chopped parsley, taste and adjust seasoning, then serve immediately.

Notes

For extra cheesiness, stir an additional tablespoon of Parmesan into the sauce before serving.
