Instructions

  1. Brown the Butter: In a saucepan over medium heat, melt the unsalted butter while stirring constantly until it turns a deep golden brown. Remove from heat and let it cool slightly.
  2. Preheat the Oven: Set your oven to 350°F (175°C) and prepare a baking tray by lining it with parchment paper.
  3. Mix Wet Ingredients: In a mixing bowl, whisk together the cooled, browned butter, light brown sugar, white sugar, egg, and vanilla until fully combined.
  4. Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, and salt if using unsalted pistachios.
  5. Combine Mixtures: Gradually fold the dry ingredients into the wet mixture using a spatula until no flour is visible. Avoid overmixing.
  6. Add Chocolate and Pistachios: Gently fold in the chopped dark chocolate and finely chopped pistachios until evenly distributed.
  7. Shape Cookies: Use a cookie scoop or tablespoon to drop rounded portions of dough onto the prepared baking tray.
