Quick and Easy Garlic Butter Chicken

A weeknight hero, this garlic butter chicken features juicy breasts with a golden crust and a rich garlic butter sauce.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Season the chicken: Sprinkle 1 teaspoon salt, 1/2 teaspoon black pepper, and 1 teaspoon garlic powder evenly over both sides of the chicken breasts.
  2. Heat the oil: Place a skillet over medium-high heat and add 2 tablespoons olive oil. Heat until shimmering.
  3. Sear the chicken: Add the chicken breasts to the hot skillet and cook undisturbed for 5 to 6 minutes until golden brown.
  4. Flip and finish cooking: Turn the chicken and cook for another 5 to 6 minutes until the internal temperature reaches 165°F.
  5. Rest the chicken: Remove from the pan and set aside while making the sauce.
  6. Make the garlic butter sauce: Reduce heat to medium, add 3 tablespoons unsalted butter, and allow to melt gently.
  7. Add garlic and seasoning: Once melted, add the minced garlic and Italian seasoning. Sauté for 1 minute until fragrant.
  8. Return chicken to the pan: Place the chicken back in and spoon the sauce over the top, cooking for an additional 2 to 3 minutes.
  9. Garnish and serve: Sprinkle with parsley if desired, and serve warm.

Notes

For even cooking, pound thicker chicken breasts to an even thickness. Use a stainless steel or cast iron skillet for the best browning.
