Pecan Snowball Cookies

Tender and buttery cookies with finely chopped pecans, coated in powdered sugar for a snowy finish.

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup finely chopped pecans
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and 1/2 cup powdered sugar until smooth and fluffy, about 2 to 3 minutes.
  3. Mix in the vanilla extract until fully incorporated.
  4. Whisk together the all-purpose flour and salt in a separate bowl.
  5. Gradually add the dry ingredients to the butter mixture, mixing just until a soft dough forms.
  6. Fold in the finely chopped pecans gently until evenly distributed.
  7. Roll the dough into 1-inch balls and place them on the baking sheet about 1 to 1 1/2 inches apart.
  8. Bake for 12 to 14 minutes or until the bottoms are lightly golden.
  9. Let the cookies cool on the baking sheet for 5 minutes, then roll them in powdered sugar while still warm.
  10. Once fully cooled, roll the cookies in powdered sugar a second time to create the snowy coating.

Notes

For the best results, ensure the butter is softened, but not melted. Store cookies in an airtight container at room temperature for up to 5 days.
