No-Bake Yogurt Tart

A fresh, light no-bake yogurt tart featuring a chewy nut and date crust, creamy Greek yogurt filling, and colorful sliced fruit topping.

  • 15 pitted Medjool dates, about 1 cup loosely packed
  • 3/4 cup unsalted cashews
  • 3/4 cup unsalted almonds
  • 1 cup Greek yogurt
  • Assorted sliced fresh fruit (for topping, optional)
  • 2 Tablespoons apricot preserves (optional)
  • 1 Tablespoon water (optional)

Instructions

  1. Prepare the tart pan by spraying the bottom of a 9-inch tart pan with nonstick spray and lining it with parchment paper.
  2. Soak the dates in warm water for 10 minutes, then drain and cut them in half.
  3. Make the crust mixture by pulsing the dates, cashews, and almonds together in a food processor until a sticky dough forms.
  4. Press the dough evenly into the prepared tart pan, compacting it firmly.
  5. Spread the yogurt on top of the crust, smoothing it to the edges.
  6. Decorate with assorted sliced fresh fruit on top of the yogurt.
  7. Add a glossy finish by mixing apricot preserves with water and brushing over the fruit.
  8. Chill and serve, or refrigerate for up to 1 day.

Notes

If your dates are very dry, soak them an extra 5 minutes. This tart does not freeze well due to yogurt and fresh fruit.
