No-Bake Lemon Oat Cookies

A bright and simple treat, these no-bake lemon oat cookies feature a chewy texture with a refreshing lemon aroma, perfect for quick snacks and gatherings.

  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, cut into pieces
  • 1/4 cup whole milk (or 2%)
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest (optional), finely grated

Instructions

  1. Line a sheet pan with wax paper or parchment paper and set it aside.
  2. Add the granulated sugar, butter pieces, and milk to a medium saucepan over medium heat.
  3. Continue stirring constantly until the butter melts completely and the sugar dissolves.
  4. Bring the mixture to a gentle boil and cook for 1 minute while stirring.
  5. Remove the saucepan from heat and stir in the quick oats, salt, and lemon zest until combined.
  6. Drop rounded spoonfuls of the mixture onto the prepared paper, pressing lightly if preferred.
  7. Let the cookies sit at room temperature for 15 to 30 minutes until firm.

Notes

Use finely grated lemon zest to avoid bitter white pith. Store cooled cookies in an airtight container for up to 3 days.
