No Bake Chocolate Oatmeal Bars

  • 1/2 cup light brown sugar (packed)
  • 2 tsp vanilla (optional)
  • 3 cups quick oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter (creamy)

Instructions

  1. Start by lining an 8×8-inch baking dish with parchment paper for easy removal of the bars.
  2. In a medium bowl, combine the semi-sweet chocolate chips and peanut butter. Melt these together either in the microwave or on a stovetop over low heat, stirring until the mixture is smooth. Set aside to cool slightly.
  3. In a large saucepan, melt the butter and brown sugar over medium heat, stirring often until fully combined.
  4. Once the butter and sugar are melted, stir in the vanilla (if using). Then, add the quick oats to the saucepan.
  5. Cook this mixture for about 2 to 3 minutes, stirring continuously to ensure that the oats are evenly coated.
  6. Press half of the oatmeal mixture firmly into the bottom of the prepared dish. Make sure it is packed tightly for a sturdy base.
  7. Pour the melted chocolate and peanut butter mixture over the pressed oatmeal layer, spreading it evenly.
  8. Sprinkle the remaining oatmeal mixture on top and lightly press down once more.
  9. Place the dish in the refrigerator and allow it to set for at least 120 minutes or until firm.

Notes

Ensure you pack the oatmeal mixture tightly to create a sturdy base for the bars. Store leftover bars in an airtight container in the refrigerator for up to one week.
