  • 1 cup fine cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/3 cup packed light or dark brown sugar
  • 2 tablespoons honey
  • 1 large egg, at room temperature
  • 1 cup buttermilk, at room temperature

Instructions

  1. Preheat your oven to 400°F (204°C) and lightly grease a baking pan or cast-iron skillet.
  2. Combine dry ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt.
  3. Mix wet ingredients: In a separate bowl, whisk together the melted butter, brown sugar, and honey until smooth.
  4. Incorporate egg and buttermilk: Add the egg and buttermilk to the butter mixture and mix until fully integrated.
  5. Combine wet and dry: Pour the wet ingredients into the dry ingredients and stir gently until just blended.
  6. Bake: Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

Notes

For an extra touch, consider adding jalapeños or shredded cheese for a savory twist. Store leftover cornbread in an airtight container at room temperature for up to 2 days.
