These Key Lime Cheesecake Bars are bright, creamy, and refreshingly tart, with a crisp graham crust that balances the silky filling.

  • 12 full-sheet graham crackers, crushed
  • 6 Tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 4 ounces full-fat brick cream cheese, softened
  • 4 large egg yolks
  • 14-ounce can of sweetened condensed milk
  • 1/2 cup key lime juice
  • 2 teaspoons lime zest
  • Optional for garnish: whipped cream and lime slices

Instructions

  1. Preheat the oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper.
  2. Grind the graham crackers into fine crumbs using a food processor.
  3. Combine the crumbs with sugar and melted butter until evenly moistened.
  4. Press the graham mixture into the bottom of the prepared pan.
  5. Place the pan in the oven and prebake the crust for 10 minutes.
  6. Beat the cream cheese until smooth in a mixing bowl.
  7. Add the egg yolks one at a time, mixing well after each addition.
  8. Gradually mix in the sweetened condensed milk, key lime juice, and lime zest until smooth.
  9. Pour the filling over the prebaked crust and smooth the top.
  10. Bake in the oven for 18 to 20 minutes.
  11. Cool the pan at room temperature for 30 minutes, then chill in the refrigerator for 2 to 3 hours before slicing.

Notes
