Juicy Garlic Butter Chicken

A cozy, flavor-packed skillet meal featuring tender chicken thighs and a silky garlic butter cream sauce.

  • 2 pounds boneless, skinless chicken thighs
  • 8 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley, plus more for garnish
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  2. (Optional) Heat a skillet over medium-high heat, add olive oil, and sear the chicken for 3 to 4 minutes on each side until golden brown.
  3. Remove the chicken and set it aside on a plate.
  4. Reduce the heat to medium, add remaining butter, and sauté minced garlic until fragrant.
  5. Pour in the chicken broth, scraping the bottom of the skillet to deglaze.
  6. Simmer the broth for 2 minutes, then stir in heavy cream and continue to simmer until slightly thickened.
  7. Stir in lemon juice, taste, and adjust seasoning as needed. Return chicken to the skillet and simmer on low until cooked through.
  8. Stir in chopped parsley, garnish, and serve immediately with your choice of side.

Notes

Pat the chicken dry before seasoning for a better sear. Store leftovers in an airtight container for up to 3 days.
