Ingredients

Scale
  • 16 Biscoff cookies or Vanilla Wafers
  • 34 cup toasted nuts (walnuts, pistachios, or hazelnuts)
  • 1 cup dark chocolate chips
  • 13 cup heavy cream
  • 1 tablespoon Frangelico, Amaretto, Kahlua, or other liqueur (optional)
  • 1 cup powdered sugar for coating

Instructions

  1. Break the cookies into roughly ½-inch pieces and mix with your choice of toasted nuts.
  2. Combine the dark chocolate chips and heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring until smooth.
  3. Pour the melted chocolate mixture over the cookie and nut mixture. Stir until well combined.
  4. Lay out a piece of plastic wrap and transfer the chocolate mixture onto it, shaping into a log. Wrap tightly.
  5. Place the wrapped salami in the refrigerator for at least 2 hours, until firm.
  6. Remove the chocolate salami from the wrap and roll in powdered sugar, brushing off excess.
  7. Slice into pieces and store in an airtight container in the refrigerator.

Notes

Helpful Tip: Use your hands when breaking the cookies for a rustic look. The salami can be frozen for up to 3 months.
