Honey Lime Chicken Avocado Rice

A delightful meal combining tender chicken marinated in a zesty honey-lime dressing with creamy avocado rice.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice, freshly squeezed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 1 cup white or brown rice
  • 2 cups water or chicken broth
  • 1 tablespoon olive oil (for rice)
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon lime zest
  • 1/2 cup sour cream (optional)
  • Lime wedges (optional)

Instructions

  1. In a small bowl, combine honey, lime juice, 2 tablespoons of olive oil, minced garlic, chili powder, cumin, salt, and pepper. Whisk together until well-blended.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat your grill, grill pan, or skillet over medium-high heat.
  4. Remove the chicken from the marinade, shaking off any excess. Grill or cook for 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C). Let the chicken rest for 5 minutes before slicing.
  5. While the chicken is resting, cook the rice according to package instructions, using water or chicken broth.
  6. Once the rice is done, fluff it with a fork and stir in 1 tablespoon of olive oil, diced avocado, fresh cilantro, lime zest, and season with salt and pepper to taste.
  7. To serve, layer a portion of the avocado rice at the bottom of your serving dishes, top with sliced honey lime chicken, and drizzle with sour cream if desired. Garnish with extra lime wedges.

Notes

For a spicy kick, add 1/4 teaspoon of cayenne pepper to the marinade. Store leftovers in airtight containers.
