  • 2 pork tenderloins (about 1 to 1 1/2 pounds each), trimmed if needed and patted dry
  • 1/4 cup all-purpose flour
  • 1/2 cup chicken stock (low-sodium preferred)
  • 6 tablespoons unsalted butter (divided into chunks)
  • 2 cloves garlic (minced or finely diced)
  • 1 tablespoon fresh parsley (finely chopped)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon (divided into 4 wedges for serving)

Instructions

  1. Prepare the dredge. In a shallow dish, combine the 1/4 cup all-purpose flour, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix evenly.
  2. Butterfly the tenderloins. Lay each pork tenderloin flat and butterfly through the center to create four even-sized pieces.
  3. Dredge the pork. Coat each butterflied piece in the seasoned flour, shaking off excess.
  4. Heat the pan. Place a large frying pan over medium-high heat and add 1 tablespoon of butter and 1 tablespoon of olive oil.
  5. Cook the pork. Add the floured pork pieces to the hot pan and cook for 3 to 5 minutes per side until golden and cooked through. Remove and set aside.
  6. Reduce heat and sauté garlic. Lower the heat, add minced garlic and cook for 1 to 2 minutes until fragrant.
  7. Deglaze the pan. Pour in the 1/2 cup chicken stock and scrape browned bits from the bottom of the pan.
  8. Finish the sauce. Add remaining butter, whisk until melted, then stir in parsley and adjust seasoning.
  9. Combine and simmer briefly. Return pork to the pan, spoon sauce over, and warm through.
  10. Serve with lemon. Plate the pork, spoon extra sauce over, and serve with lemon wedges.

Notes

Pat the meat dry before dredging for a better golden crust. Use a thermometer to ensure pork reaches an internal temperature of 145°F.
