Garlic Butter Chicken Bites

Warm, garlicky, and utterly satisfying, these Garlic Butter Chicken Bites are quick to prepare and deliciously comforting.

  • 2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Prepare the chicken and season. Cut the chicken into bite-sized pieces and pat them dry with a paper towel. In a bowl, season the chicken with salt, pepper, paprika, thyme, and parsley, tossing so each piece is evenly coated.
  2. Heat the skillet and sear the chicken. Heat a large skillet over medium-high heat until hot. Add the olive oil, then add the seasoned chicken in a single layer. Cook each batch for 6 to 7 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  3. Make the garlic butter sauce. Lower the heat to medium and add the unsalted butter to the same skillet. Let it melt, then add the minced garlic and cook for 1 to 2 minutes until fragrant.
  4. Combine chicken with the sauce. Return the cooked chicken pieces to the skillet and toss them to coat in the garlic butter sauce.
  5. Add Parmesan and finish. Sprinkle the grated Parmesan cheese over the chicken and stir to combine. Cook for an additional 2 to 3 minutes until the cheese melts into the sauce. Serve hot.

Notes

Use evenly sized chicken pieces for even cooking. Cool leftover chicken to room temperature before storing in the refrigerator.
