  • 4 boneless skinless chicken breasts, trimmed of excess fat
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon olive oil
  • Fresh parsley, optional

Instructions

  1. Pat the chicken breasts dry and season both sides generously with salt and pepper.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat until shimmering.
  3. Carefully add the chicken and sear without moving for 5 to 7 minutes per side.
  4. Remove the chicken from the skillet and set it aside to rest.
  5. In the same skillet, reduce heat to medium and add 4 tablespoons unsalted butter and the minced garlic.
  6. Sauté, stirring constantly, until the garlic is fragrant and light golden.
  7. Return the chicken to the skillet, spoon sauce over each piece, and cook for another 2 minutes.
  8. Transfer the chicken to serving plates and garnish with fresh parsley if desired.

Notes

Patting the chicken dry is key to a golden sear. Refrigerate leftovers in an airtight container for up to 3 days.
