Fajita Chicken Casserole

A comforting one-dish meal blending fajita flavors with creamy chicken, rice, and vegetable goodness.

  • 4 cups cooked, shredded chicken
  • 2 cups instant rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper mix
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1.5 cups chicken broth

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine cooked chicken, instant rice, cream of chicken soup, sour cream, frozen onion and pepper mix, diced tomatoes with green chilies, and chicken broth in a large mixing bowl.
  3. Mix well until all ingredients are fully combined.
  4. Pour the mixture into a greased 9×13 inch casserole dish and spread it evenly.
  5. Cover with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes until heated through and bubbly.
  7. Let it cool for a few minutes before serving.

Notes

Use warm chicken and broth for quicker baking. Leftovers reheat well in the microwave.
