Delightful Strawberry Honeybun Cake with Creamy Icing

A moist and tender vanilla cake layered with juicy strawberries and topped with creamy icing, perfect for gatherings and celebrations.

  • 1 box Vanilla Cake Mix
  • 3 large Eggs
  • 1 cup Sour Cream
  • 1/2 cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Brown Sugar
  • 2 teaspoons Ground Cinnamon
  • 2 cups Strawberries (diced)
  • 2 cups Powdered Sugar
  • 1/4 cup Milk
  • 1/2 cup Strawberry Puree

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine the vanilla cake mix, eggs, sour cream, vegetable oil, and vanilla extract. Mix until smooth and well blended.
  3. In a separate bowl, whisk together the brown sugar and ground cinnamon until combined.
  4. Pour half of the batter into the prepared pan, spreading it evenly.
  5. Evenly sprinkle the brown sugar mixture over the first layer of batter, followed by a layer of diced strawberries.
  6. Pour the remaining batter over the strawberries, making sure they are covered.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the icing by whisking together the powdered sugar, milk, and strawberry puree until smooth and creamy.
  9. Once baked, cool the cake for 10 minutes in the pan before transferring it to a wire rack to cool completely.
  10. Drizzle the creamy icing over the cooled cake before serving.

Notes

For extra strawberry flavor, add fresh slices on top of the icing before serving. Store leftovers in an airtight container for up to 3 days.
