Crispy Parmesan Garlic Zucchini Fries

Delicious and healthy crispy zucchini fries infused with garlic and Parmesan, ideal as an appetizer, side dish, or snack.

  • 2 medium zucchinis
  • 65 grams all-purpose flour
  • 2 large eggs, beaten
  • 60 grams panko breadcrumbs
  • 50 grams grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil spray

Instructions

  1. Preheat your oven to 220°C (about 425°F) and line a baking sheet with parchment paper, lightly misting it with olive oil.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and the last with a mixture of panko breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  3. Coat each zucchini piece with flour, then dip in the eggs, allowing excess to drip off, before moving to the breadcrumb mixture and pressing lightly to adhere.
  4. Arrange the coated zucchini fries on the baking sheet in a single layer, spaced apart for even cooking.
  5. Lightly spray the tops of the fries with additional olive oil.
  6. Bake for 20 to 25 minutes, turning them halfway through, until golden brown and crispy.
  7. Serve hot with your choice of dipping sauces such as marinara, ranch, or aioli.

Notes

For extra crunch, consider adding a sprinkle of cornmeal to the breadcrumb mixture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
