Cowboy Butter Lemon Bowtie Chicken with Broccoli

Warm, bright, and comforting, this dish combines rich butter sauce, zesty lemon, tender chicken, and crisp-tender broccoli tossed with bowtie pasta for a delicious weeknight dinner.

  • 12 oz bowtie pasta, dried
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 1/2 cup unsalted butter
  • 1 lemon, zested and juiced
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the bowtie pasta according to package instructions; drain and set aside. Tip: Reserve 1/4 cup of the pasta cooking water.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the minced garlic, paprika, salt, and black pepper; cook for 1 to 2 minutes until fragrant.
  4. Toss in the diced chicken and cook until browned, about 6 to 8 minutes.
  5. Stir in the broccoli and cook for an additional 3 to 4 minutes until tender.
  6. Squeeze in the lemon juice and add the zest; mix well.
  7. Toss the cooked pasta into the skillet, ensuring it’s coated in the sauce.
  8. Garnish with parsley and serve warm.

Notes

Cut the chicken into uniform pieces for even browning. Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
