Chewy Cookie Recipe

  • 1 cup butter
  • 1½ cups light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 3 cups add-ins of your choice (chocolate chips, nuts, dried fruits, etc.)
  • Maldon salt for topping (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Melt the butter in a saucepan over low heat and stir in light brown sugar until combined.
  3. Cool the mixture in the refrigerator for about 10 to 20 minutes.
  4. Whisk together the all-purpose flour, rolled oats, baking soda, and kosher salt in a separate bowl.
  5. Add the eggs and vanilla to the cooled butter mixture and stir until well combined.
  6. Fold in the dry mixture until just combined, avoiding overmixing.
  7. Incorporate your selected add-ins to customize the cookies.
  8. Scoop the dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
  9. Bake for 12 to 15 minutes or until the edges are golden.
  10. Sprinkle Maldon salt on top immediately after baking if desired.
  11. Cool on the baking sheet for a few minutes, then transfer to a wire rack.

Notes

Store cookies in an airtight container for up to one week. For longer storage, freeze the dough balls for up to three months.
