Classic Church Shortbread Cookies

These buttery and tender shortbread cookies have a delicate crumb that melts in your mouth, making them a timeless treat perfect for any occasion.

  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/3 cup cornstarch
  • 2 tbsp granulated sugar (for sprinkling)

Instructions

  1. Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Beat the softened butter and powdered sugar together until light and creamy, about 2 to 3 minutes.
  3. Add the vanilla extract and mix until smooth.
  4. Whisk together the flour, salt, and cornstarch in a separate bowl.
  5. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
  6. Roll the dough into balls about 1 tablespoon each.
  7. Place the cookies on the prepared baking sheet about 2 inches apart.
  8. Flatten each cookie with a glass or fork, then sprinkle granulated sugar on top.
  9. Bake for 14 to 16 minutes, until the edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a cooling rack.

Notes

Use room temperature butter for easier creaming and a lighter texture. Store cooled cookies in an airtight container at room temperature for up to 5 days.
