Chocolate Marshmallow Cookies

A delightful blend of rich chocolate and chewy marshmallows in a simple, one-bowl cookie recipe that’s perfect for any occasion.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheets with parchment paper.
  3. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and baking soda. Gradually blend this into the wet ingredients.
  6. Fold in the chocolate chips and mini marshmallows.
  7. Drop rounded tablespoons of dough onto the lined baking sheets and bake for 10–12 minutes.
  8. Allow to cool on the sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For softer cookies, avoid overbaking them and store in an airtight container to maintain moisture.
