These no-bake Chocolate Chip Cookie Truffles are a delightful indulgence for cookie lovers, featuring the taste of classic cookie dough with pockets of chocolate chips, all coated in semi-sweet chocolate.

  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons milk, any kind
  • 1/2 teaspoon pure vanilla extract or vanilla bean paste
  • 1 and 1/4 cups heat-treated all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 8 ounces semi-sweet or bittersweet chocolate, finely chopped
  • 1/2 teaspoon vegetable oil or coconut oil
  • Optional for garnish: flaky sea salt and/or chocolate sprinkles

Instructions

  1. Cream the butter and sugars until light and fluffy, about 3 minutes.
  2. Add milk and vanilla, then beat until combined and smooth.
  3. Mix in flour and salt until a thick dough forms.
  4. Fold in mini chocolate chips until evenly distributed.
  5. Shape the dough into balls, refrigerate for at least 1 hour.
  6. Melt the coating chocolate with oil until smooth.
  7. Coat each dough ball in melted chocolate and tap off excess.
  8. Garnish with flaky sea salt or sprinkles if desired, then refrigerate to set.
  9. Store in an airtight container in the fridge for up to 10 days.

Notes

If the dough is too sticky, chill for an additional 15-30 minutes before rolling. Use refined coconut oil for a neutral taste.
