Chocolate Chip Baked Oatmeal Cups

  • 1 and 1/2 cups milk (dairy or nondairy)
  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/2 cup creamy or crunchy almond butter
  • 3 and 1/4 cups old-fashioned whole rolled oats
  • 1/3 cup ground flaxseed
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350F (177C). Prepare a muffin pan by greasing it or lining it with muffin liners for easy removal.
  2. Whisk together the milk, eggs, maple syrup, applesauce, almond butter, rolled oats, ground flaxseed, baking powder, cinnamon, vanilla extract, and salt until fully combined.
  3. Fold in the chocolate chips until evenly distributed throughout the mixture.
  4. Spoon the mixture into the muffin cups, filling each cup to the top for the best height and texture.
  5. Bake in the preheated oven for approximately 28-30 minutes until edges are lightly browned and a toothpick inserted comes out clean.
  6. Let the oatmeal cups cool for a few minutes before enjoying. Store any extras in the fridge for up to a week.
