Chicken Bites In Garlic Butter

Quick and flavorful chicken bites seared and tossed in a garlicky butter sauce with a hint of lemon.

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Prepare the chicken: Cut the chicken breasts into 1-inch bite-sized pieces and pat them very dry with paper towels.
  2. Season: In a mixing bowl, combine the chicken with salt, black pepper, paprika, and garlic powder. Toss until evenly coated.
  3. Dust with flour: Sprinkle the flour over the seasoned chicken and toss again to coat.
  4. Heat the pan: Warm a skillet over medium-high heat, adding the olive oil and 1 tablespoon of butter.
  5. Sear the chicken: Add the chicken to the skillet and sear without moving for 2 to 3 minutes until golden brown.
  6. Remove and rest: Transfer the chicken to a plate, leaving the browned bits in the skillet.
  7. Make the garlic butter sauce: Lower the heat, add the remaining butter, and cook the minced garlic until fragrant.
  8. Add flavor: Stir in crushed red pepper flakes and lemon juice, scraping the pan to dissolve the browned bits.
  9. Combine and simmer: Return the chicken to the skillet and toss well to coat in the sauce.
  10. Finish and serve: Stir in chopped parsley and sprinkle with Parmesan if using. Serve immediately.

Notes

Pat the chicken dry before seasoning for a good sear. Do not overcrowd the pan for best results.
