Cheesy Hashbrown Dorito Casserole

A comforting casserole filled with savory ground beef, creamy cheddar soup, spicy Rotel, and tender hashbrowns.

  • 1 lb ground beef, 80/20
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 lb frozen hashbrowns, thawed
  • 1 can Rotel (diced tomatoes with green chilies)
  • 1 can cheddar cheese soup
  • 1/2 cup sour cream
  • 1 packet taco seasoning

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, add the ground beef and cook until browned.
  3. Drain excess grease from the skillet, then return the beef and stir in the onion powder, garlic powder, and cumin.
  4. In a large bowl, combine the seasoned beef with the hashbrowns, Rotel, cheddar cheese soup, sour cream, and taco seasoning.
  5. Spread the mixture in the prepared baking dish and smooth the top with a spatula.
  6. Bake for 30 to 35 minutes until heated through and slightly golden on top.
  7. Remove from the oven and let cool for 5 minutes before serving.

Notes

For firmer texture, press the mixture into the dish and let it rest before slicing. Cover with foil if browning too quickly.
