Cheesy Garlic Butter Chicken Bowties

Tender chicken and bowtie pasta tossed in a rich garlic butter cream sauce, topped with gooey mozzarella for a comforting weeknight meal.

  • 1 lb boneless, skinless chicken breasts, cubed
  • 3 tbsp butter
  • 3 garlic cloves, minced
  • 12 oz bowtie pasta (farfalle)
  • 1 cup heavy cream
  • 1 ½ cups freshly grated mozzarella
  • ½ cup Parmesan (optional)
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • Fresh parsley or basil, for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the bowtie pasta until al dente. Reserve ½ cup of pasta water, then drain.
  2. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Add the cubed chicken, season with salt and pepper, and cook until golden and fully cooked through. Set the chicken aside.
  3. Lower the heat to medium. In the same skillet, melt 3 tablespoons butter and add the minced garlic. Sauté until fragrant, about 30 seconds.
  4. Add 1 cup heavy cream and stir, scraping up browned bits from the pan. Let it simmer for 2 to 3 minutes until it thickens slightly.
  5. Return the cooked chicken to the skillet and toss to coat in the garlic butter cream sauce.
  6. Stir in 1 ½ cups grated mozzarella and ½ cup Parmesan if using, mixing until melted and smooth.
  7. Add the cooked pasta to the skillet and toss everything together. If the sauce is too thick, add reserved pasta water a little at a time until reaching desired consistency.
  8. Season with salt and pepper to taste, garnish with fresh parsley or basil, and serve hot.

Notes

Use freshly grated mozzarella for the best melt and texture. Taste and adjust seasoning after adding cheese, as it adds saltiness.
