Buckeyes (Peanut Butter Balls)

Delightful no-bake treats featuring creamy peanut butter centers coated in smooth semi-sweet chocolate.

Ingredients

  • 1½ cups creamy peanut butter
  • ½ cup butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 16 ounces semi-sweet chocolate chips
  • ¼ cup shaved paraffin wax

Instructions

  1. Beat together the creamy peanut butter and softened butter until well-blended.
  2. Stir in the vanilla extract until fully combined.
  3. Add the powdered sugar gradually, blending until smooth and fluffy.
  4. Roll the mixture into 1-inch balls and place on a baking sheet.
  5. Chill the balls in the freezer for 60 minutes to firm up.
  6. Melt semi-sweet chocolate chips and paraffin wax together in the microwave.
  7. Dip each chilled ball into the melted chocolate mixture and allow excess to drip off.
  8. Set on wax paper to harden before serving.

Notes

Dust hands with powdered sugar for easier rolling. Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months.
