Brownie Muffins

Delightful brownie muffins that combine fudgy decadence with the convenience of muffins, perfect for any sweet craving.

  • 1 1/4 cups semi-sweet chocolate chips
  • 2/3 cup unsalted butter
  • 1/4 cup oil
  • 3 eggs (room temperature)
  • 1/2 cup white sugar
  • 1/2 cup dark brown sugar
  • 1 tbsp vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/4 cup cocoa powder (sifted)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (176°C) and prepare your muffin tin with muffin liners.
  2. Whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl. Set aside.
  3. Melt the unsalted butter in a saucepan over low heat. Once melted, remove from heat and stir in the semi-sweet chocolate chips until smooth and glossy.
  4. Combine the melted chocolate mixture with white sugar, dark brown sugar, oil, eggs, and vanilla extract in a large mixing bowl. Mix well until fully incorporated.
  5. Fold the dry ingredients into the wet ingredients until just combined, avoiding overmixing.
  6. Scoop the batter into the prepared muffin liners, filling each about three-quarters full.
  7. Sprinkle additional semi-sweet chocolate chips on top, if desired.
  8. Bake for 25 to 35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.

Notes

For best texture, ensure eggs are at room temperature. Store leftovers in an airtight container at room temperature for up to three days.
