Brownie Muffins

These Brownie Muffins are soft, fudgy treats combining the rich decadence of traditional brownies in a handheld form, perfect for breakfast, dessert, or snacks.

  • 1 1/4 cups semi-sweet chocolate chips
  • 2/3 cup unsalted butter
  • 1/4 cup oil
  • 3 eggs (room temperature)
  • 1/2 cup white sugar
  • 1/2 cup dark brown sugar
  • 1 tbsp vanilla
  • 1 1/3 cups all-purpose flour
  • 1/4 cup cocoa powder (sifted)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (176°C) and line a muffin tin with liners.
  2. Combine the all-purpose flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl. Set aside.
  3. In a saucepan over low heat, melt the unsalted butter. Once fully melted, add the 1 1/4 cups of semi-sweet chocolate chips and stir until smooth.
  4. Remove the saucepan from heat and mix in both the white and dark brown sugars along with the oil until well combined.
  5. Add in the eggs and vanilla, gently whisking until everything is fully incorporated.
  6. Gradually stir in the dry ingredients until just mixed. Be careful not to over-mix.
  7. Fill each muffin liner with the batter, leaving a little room at the top for rising.
  8. If desired, sprinkle the additional 3/4 cup of semi-sweet chocolate chips on top before baking.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Notes

Enjoy these muffins warm with a scoop of vanilla ice cream. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. These muffins freeze well for up to 3 months.
