Blueberry Pie Bars

Delicious Blueberry Pie Bars with a buttery oat crust and vibrant blueberry filling, perfect for summer picnics or family gatherings.

  • 1 and 1/2 cups all-purpose flour
  • 1 cup old-fashioned whole rolled oats
  • 1/2 cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 10 Tablespoons unsalted butter, melted
  • 4 and 1/2 cups blueberries
  • 1/2 cup granulated sugar
  • 2 Tablespoons cornstarch
  • 1 Tablespoon lemon juice
  • 2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9-inch square pan with parchment paper for easy removal.
  2. Whisk together the flour, oats, brown sugar, baking powder, lemon zest, cinnamon, and salt until well combined.
  3. Pour the melted butter into the dry ingredients and mix until the mixture resembles a crumbly texture.
  4. Press about 2/3 of this mixture into the bottom of the prepared pan to form the crust. Bake for 10 minutes.
  5. Combine the blueberries, granulated sugar, cornstarch, and lemon juice in a medium saucepan over medium heat. Stir constantly until the mixture thickens, which should take about 5-7 minutes.
  6. Pour the blueberry filling over the par-baked crust and sprinkle the remaining crumbly mixture on top.
  7. Return the pan to the oven and bake for an additional 45-55 minutes, or until the filling is set and the top is lightly golden.
  8. Allow the bars to cool completely in the pan, then cut into squares for serving.

Notes

For a crunchier texture, consider adding chopped nuts to the crumbly mixture. These bars can be made ahead of time and are great for storage.
