Blueberry Crumble Bars

Chewy dessert bars bursting with juicy blueberries and topped with a buttery crumble.

  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick oats
  • 1 egg yolk (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 3 tbsp lemon juice
  • 2 cups frozen blueberries (or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper for easy removal.
  2. In a large bowl, combine the brown sugar, white sugar, flour, and quick oats. Mix until well blended.
  3. Add the egg yolk and melted butter to the dry ingredients, mixing until the mixture becomes crumbly.
  4. Reserve 1 cup of the crumble mixture, then press the remaining crumble evenly into the bottom of the prepared baking pan.
  5. In a separate bowl, combine the blueberries, white sugar, and lemon juice. Toss gently to coat the blueberries.
  6. Spoon the blueberry mixture evenly over the crumble base.
  7. Sprinkle the reserved crumble mixture on top of the blueberry filling.
  8. Bake for 30-35 minutes, or until the crumble is golden brown and the filling is bubbly.
  9. Allow the bars to cool before lifting them out of the pan using the parchment paper. Cut into squares for serving.

Notes

For optimal texture, use room temperature ingredients. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
