  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 cup fresh blackberries
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and grease two 9-inch cake pans.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream Butter and Sugar: In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add Eggs: Beat in the eggs, one at a time, mixing well after each addition.
  5. Combine Flavors: Add in the dry mixture, alternating with buttermilk until just combined. Gently fold in the blackberries.
  6. Bake: Divide the batter evenly between your prepared pans and bake for 25–30 minutes, or until a toothpick comes out clean.
  7. Cool and Frost: Let the cakes cool for about 10 minutes before turning out onto a wire rack to cool completely before frosting.

Notes

Store in an airtight container in the refrigerator for up to 4 days. The cake can be frozen for longer storage.
