Ingredients

Scale
  • 2 cups cooked jasmine rice
  • 1 cup mixed vegetables (like carrots, peas, and bell peppers)
  • 2 tablespoons olive oil
  • 2 green onions, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha
  • Salt and pepper to taste

Instructions

  3. In a large skillet over medium heat, add olive oil and sauté mixed vegetables for 3–4 minutes until bright and tender.
  4. Add cooked rice, breaking apart clumps, and fry for 2–3 minutes until toasty.
  5. Pour the bang bang sauce over the rice, stirring to coat, and cook for another 2–3 minutes.
  6. Stir in chopped green onions and season with salt and pepper to taste.
  7. Serve warm as a standalone dish or with a protein of your choice.

Notes

For best results, use day-old rice as it fries better than freshly cooked rice.
