Apple Oatmeal Cookies with Maple Icing

Warm, chewy, and subtly spiced, these cookies are a delightful treat that fills the kitchen with comforting aromas.

  • 2 cups old-fashioned whole rolled oats
  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light or dark brown sugar
  • 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • 3/4 cup finely diced apples
  • 1/2 cup chopped walnuts (optional)
  • 2 tablespoons unsalted butter (for icing)
  • 1/3 cup pure maple syrup
  • 1 cup sifted confectioners’ sugar
  • Pinch of salt (for icing)

Instructions

  1. Reduce the applesauce by simmering it in a saucepan over medium heat until reduced by half, about 10 minutes.
  2. Preheat the oven to 350°F (177°C) and line the baking sheets with parchment paper.
  3. Combine the oats, flour, baking soda, salt, cinnamon, allspice, and nutmeg in a large bowl.
  4. Cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 5 minutes.
  5. Add the cooled reduced applesauce, egg yolk, and vanilla to the creamed mixture; mix until fully combined.
  6. Combine the dry ingredients with the wet mixture until just combined, being careful not to overmix.
  7. Fold in the diced apples and chopped walnuts, if using. Chill for 10 minutes if the dough is loose.
  8. Scoop the dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 14 to 16 minutes until lightly browned.
  9. Cool on the baking sheet for 10 minutes before transferring them to a cooling rack.
  10. Make the icing by melting the butter and maple syrup in a saucepan, then whisking in the sifted confectioners’ sugar and a pinch of salt.
  11. Finish by drizzling the icing over the cooled cookies and allowing it to set before serving.

Notes

Use a firm, crisp apple variety for best results. Chilling the dough helps control spread.
