  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the sugar, peanut butter, and egg in a medium mixing bowl until smooth.
  3. Portion about 1 tablespoon of dough and roll it into a ball.
  4. Arrange the dough balls on the prepared baking sheet, spaced about 2 inches apart.
  5. Make a crisscross pattern on each ball using a fork.
  6. Bake for 10 minutes, or until edges are set and tops look slightly cracked.
