The Ultimate Strawberry Cream Cheese Pound Cake

  • 1 cup (8 oz) cream cheese, softened
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 loaf pan with butter or line it with parchment paper.
  3. Beat together the softened butter and cream cheese in a large mixing bowl until smooth and creamy.
  4. Gradually mix in the granulated sugar, then add the eggs one at a time.
  5. In a separate bowl, whisk together the flour, baking powder, and salt, then blend into the wet mixture.
  6. Gently fold in the chopped strawberries.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick comes out clean.
