  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are fully coated.
  3. Press the mixture firmly into the bottom of the pan to form the crust.
  4. In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract, sour cream, and flour until well combined.
  7. Pour the cheesecake batter over the crust, smoothing the top with a spatula.
  8. Bake for 55-60 minutes, until the center is set but slightly jiggly.
  9. Turn off the oven and crack the door open; let the cheesecake cool inside for 1 hour.
  10. Chill in the refrigerator for at least 4 hours, preferably overnight, before serving.

Notes

For a smoother batter, ensure cream cheese is at room temperature. Store leftovers in the refrigerator for up to 5 days, or freeze for up to 3 months.
