Strawberry Gelatin Gummies

Delightful, chewy strawberry gummies that are low in calories and a great treat for weight loss.

Ingredients

  • 2 tablespoons gelatin powder
  • 1 cup fresh strawberries, pureed
  • Sweetener to taste (honey, agave, or stevia)
  • ½ cup water
  • Citrus juice (optional, lemon or lime)

Instructions

  1. Prepare the strawberries by rinsing, hulling, and blending them until smooth to yield about 1 cup of puree.
  2. Dissolve the gelatin by sprinkling it over ½ cup of water in a small saucepan and let it bloom for 2-5 minutes.
  3. Heat the mixture on low and stir in the strawberry puree and sweetener until the gelatin is dissolved, about 3-5 minutes.
  4. Pour the mixture into silicone molds or a lined baking dish.
  5. Chill in the refrigerator for 2-4 hours until firm and set.
  6. Remove gummies from molds and store in an airtight container in the fridge for up to a week.

Notes

Experiment with different fruits and sweeteners for variety. Ensure to monitor portion sizes if sensitive to gelatin or sugars.
