Spicy Salmon Sushi Bake

A warm and flavorful casserole-style dish that combines the essence of sushi with the comfort of home cooking.

  • 2 cups sushi rice
  • 2 cups water
  • 1 pound fresh salmon fillet
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1/4 cup green onions, finely chopped
  • 1/2 teaspoon salt
  • 2 sheets nori, shredded

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse the sushi rice under cold water until the water runs clear. Combine with 2 cups of water in a pot; bring to a boil, then cover and reduce to low for about 20 minutes.
  3. While the rice is cooking, dice the fresh salmon into small cubes.
  4. In a mixing bowl, combine the mayonnaise, sriracha, green onions, and salt. Fold in the diced salmon until well coated.
  5. Layer the sushi rice evenly at the bottom of a greased baking dish. Spoon the salmon mixture over the rice, spreading it uniformly.
  6. Place the dish in the preheated oven and bake for about 20 minutes, or until it’s heated through and the top is slightly golden.
  7. Remove the dish from the oven and sprinkle the shredded nori on top. Let it sit for a few minutes before serving.

Notes

Feel free to customize it with different proteins or vegetables. Can be made ahead and stored in the fridge before baking.
