The Ultimate Moist Southern Red Velvet Cake with Classic Cream Cheese Frosting

  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 1/4 cup red food coloring
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the eggs one at a time.
  5. In a small bowl, mix together the buttermilk, vinegar, vanilla extract, and red food coloring.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk mixture, mixing until just combined.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cakes to cool in the pans for about 10 minutes, then invert onto a wire rack to cool completely.
  10. For the frosting, beat the cream cheese and butter together until smooth. Gradually add the sifted powdered sugar, mixing in the vanilla extract until well combined.
  11. Once cooled, place one cake layer on a serving plate, frost the top with one-third of the frosting, add the second layer, and frost the top and sides with the remaining frosting.

Notes

Use room temperature ingredients for a smoother batter. Sift powdered sugar to prevent clumps.
