Soft Butter Cookies

Delightful soft butter cookies that melt in your mouth with a rich buttery flavor.

  • 1 cup unsalted butter (softened)
  • ⅔ cup granulated sugar
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt
  • 2 Tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line your cookie trays with parchment paper. If the air is warm, chill the cookie dough in the fridge for 30 minutes to help maintain their shape.
  2. In a large bowl, use a hand mixer to cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg yolks and vanilla extract, mixing until well combined.
  4. Gradually add the flour and salt at low speed until large crumbles form, ensuring not to overmix.
  5. Pour in the milk and mix until the dough absorbs the liquid and comes together.
  6. Transfer the dough to a piping bag fitted with a large open star tip.
  7. Pipe the dough onto the lined cookie trays, forming rosettes.
  8. Bake for about 13 to 15 minutes, or until the edges are light golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough before baking if your kitchen is warm to help the cookies keep their shape.
