Slow Cooker Garlic Butter Beef with Potatoes

  • 23 pounds chuck roast, cut into 2-inch pieces
  • 4 medium potatoes, diced
  • 6 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup unsalted butter
  • Salt and pepper to taste
  • 1 tablespoon dried thyme
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Trim excess fat from the chuck roast, season with salt and pepper.
  2. Optional: Sear the beef in a skillet until browned.
  3. Add diced potatoes to the slow cooker, layer beef on top.
  4. Sprinkle minced garlic, thyme, Worcestershire sauce, and butter over the beef.
  5. Pour beef broth over all ingredients.
  6. Set slow cooker to low for 6-8 hours or high for 3-4 hours.
  7. Check beef for tenderness 30 minutes before serving.
  8. Serve in bowls with the garlic butter sauce ladled over the top.
