Pecan Pie Bites

A charming and delicious way to enjoy the classic flavors of pecan pie in a bite-sized form with a flaky crust and rich filling.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 cup pecans, chopped
  • 1/2 cup corn syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin to prevent sticking.
  2. In a mixing bowl, combine the flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press this mixture firmly into the bottom of each muffin cup to form a crust.
  4. In another bowl, mix the chopped pecans, corn syrup, brown sugar, eggs, vanilla extract, and salt until everything is well combined.
  5. Carefully pour the filling into each crust, being sure to avoid overfilling them.
  6. Bake in the preheated oven for 15-20 minutes, or until the filling is set and golden around the edges.
  7. Allow the bites to cool slightly before gently removing them from the muffin tin. Enjoy warm or at room temperature.

Notes

For best results, ensure your butter is at room temperature for easy mixing. Store leftovers in an airtight container for up to 3 days at room temperature or a week refrigerated. Can be frozen for up to 2 months.
