Pecan Pie Bars

These delightful Pecan Pie Bars feature a buttery shortbread crust topped with a rich, gooey pecan filling, perfect for any occasion.

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 cup corn syrup
  • ¾ cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups pecans, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add flour and salt, then mix until combined.
  3. Pour the crust mixture into the prepared baking pan and press it evenly into the bottom. Bake for 15 minutes or until just set but not browned.
  4. In a medium bowl, whisk together corn syrup, brown sugar, eggs, and vanilla extract until smooth. Stir in the chopped pecans.
  5. Once the crust is done, remove it from the oven and pour the pecan mixture over it, spreading it evenly. Bake everything for an additional 25-30 minutes, until the filling is set and the edges are golden.
  6. Let the bars cool in the pan on a wire rack for at least 30 minutes before slicing.
  7. Lift the bars out of the pan using the parchment paper, slice into squares, and serve.

Notes

These bars can be served warm or at room temperature, and pair beautifully with vanilla ice cream or coffee.
