Mouthwatering Kielbasa Gnocchi Skillet

A quick and delicious one-skillet meal featuring smoky kielbasa, tender gnocchi, and vibrant vegetables, perfect for busy weeknight dinners.

  • 1 pound kielbasa, sliced
  • 1 pound gnocchi, store-bought or homemade
  • 2 bell peppers, any color, sliced
  • 1 cup frozen peas
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. In a large skillet over medium heat, add the olive oil.
  2. Add the sliced kielbasa and cook for 5-7 minutes until browned.
  3. Stir in the minced garlic and sliced bell peppers, cooking for an additional 3-4 minutes.
  4. Add the gnocchi and a splash of water (about ¼ cup) to the skillet.
  5. Sprinkle in the Italian seasoning, salt, and pepper. Cook for about 5-6 minutes, stirring occasionally.
  6. In the last few minutes, toss in the frozen peas and heat through.
  7. Taste and adjust the seasoning if necessary before serving.

Notes

This dish reheats beautifully. For leftovers, store in an airtight container in the fridge for up to three days.
