Mongolian Ground Beef Noodles

A quick and delicious dinner recipe that combines succulent ground beef with chewy noodles and vibrant vegetables, perfect for busy weeknights.

  • 8 oz. egg noodles
  • 1 lb. ground beef
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • 3 cloves garlic, minced
  • 2 inches fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp sesame oil
  • 2 tsp cornstarch mixed with 2 tbsp water

Instructions

  1. In a large pot of boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, add the ground beef. Use a spatula to break it apart as it cooks, about 5-7 minutes until browned.
  3. Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.
  4. Toss in the mixed vegetables, stirring for about 5 minutes until they soften but still retain some crunch.
  5. Add the cooked noodles to the skillet, along with soy sauce, brown sugar, and sesame oil. Toss everything together.
  6. Pour in the cornstarch slurry, stirring continuously for another 1-2 minutes until the sauce thickens.
  7. Spoon the noodles into bowls, garnishing with sesame seeds or green onions if desired.

Notes

Feel free to swap in different vegetables or proteins based on your preference. This dish can be scaled up or down easily.
